Prepare your workspace: Line an 8x8 or 9x13 baking pan with parchment paper or spray thoroughly with cooking spray. Spray your mixing utensils with cooking spray as well.
Toast the coconut: If you haven't already, toast your coconut flakes in a dry skillet over medium heat for 3-5 minutes, stirring constantly until golden brown. Set aside to cool.
Melt the marshmallows: In a large, heavy-bottomed pot over low heat, melt the butter completely. Add the regular marshmallows and stir continuously until fully melted and smooth.
Add extracts: Remove from heat and immediately stir in the coconut extract and vanilla extract until well combined.
